Chicken and Zucchini Bake

- 4 Boneless skinless chicken breasts
- 3 Medium Zucchini
- 3 Medium Roma Tomatoes
- 1 Egg, lightly beaten
- 1 Cup Panko breadcrumbs
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1 Cup Mozzarella Cheese, shredded
- 4 Tbsp Olive Oil, divided
- 2 Tsp Fresh Basil, minced
- 1 Tbsp Water
Whisk egg with water in small bowl
Mix breadcrumbs with salt and pepper in small bowl
Dip chicken into egg, then breadcrumbs, coating evenly
Brown Chicken in two tablespoons olive oil, about 8 minutes each side, set aside
Brown zucchini in two tablespoons olive oil
Layer zucchini, sliced tomatoes, cheese, and chicken into baking dish
Bake at 400 degrees for 45 minutes or until chicken is fully cooked.
