Ingredients
  

  • 4 Boneless skinless chicken breasts
  • 3 Medium Zucchini
  • 3 Medium Roma Tomatoes
  • 1 Egg, lightly beaten
  • 1 Cup Panko breadcrumbs
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1 Cup Mozzarella Cheese, shredded
  • 4 Tbsp Olive Oil, divided
  • 2 Tsp Fresh Basil, minced
  • 1 Tbsp Water

Instructions
 

  • Whisk egg with water in small bowl
  • Mix breadcrumbs with salt and pepper in small bowl
  • Dip chicken into egg, then breadcrumbs, coating evenly
  • Brown Chicken in two tablespoons olive oil, about 8 minutes each side, set aside
  • Brown zucchini in two tablespoons olive oil
  • Layer zucchini, sliced tomatoes, cheese, and chicken into baking dish
  • Bake at 400 degrees for 45 minutes or until chicken is fully cooked.
