Easy Chicken and Zucchini Bake

After a long hard day, it’s nice to come home to something easy to make for dinner. There’s almost nothing easier than this easy chicken and zucchini bake. You can pull it off with about 15 minutes of prep, then let it bake while you relax.

What makes this even better is when you have fresh zucchini from the garden. It’s a great way to use up some of your harvest to put them into this dish. We all end up with a few too many of that tasty squash every year.

If you are raising your own chickens, you can go all organic with this meal easily. What is better than a home cooked meal using fresh ingredients you personally grew and raised yourself?

Get it Prepped for the Oven

You will need a large heavy skillet and some boneless chicken pieces. Dip the chicken in an egg wash and then into some panko breadcrumbs with some salt and pepper added. Brown the chicken in two tablespoons of olive oil in your skillet, then set it to the side.

Add a little more olive oil and brown up the zucchini leaving it a bit firm. This is because you are going to finish cooking it to perfection in the oven. Layer the zucchini, some sliced tomatoes, cheese and then chicken into a baking dish.

Pop this into a hot oven at 400 degrees for about 45 minutes. Serve it with some rice or pasta and you have a wonderful home cooked meal that whole family will enjoy.

Ingredients
  

  • 4 Boneless skinless chicken breasts
  • 3 Medium Zucchini
  • 3 Medium Roma Tomatoes
  • 1 Egg, lightly beaten
  • 1 Cup Panko breadcrumbs
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1 Cup Mozzarella Cheese, shredded
  • 4 Tbsp Olive Oil, divided
  • 2 Tsp Fresh Basil, minced
  • 1 Tbsp Water

Instructions
 

  • Whisk egg with water in small bowl
  • Mix breadcrumbs with salt and pepper in small bowl
  • Dip chicken into egg, then breadcrumbs, coating evenly
  • Brown Chicken in two tablespoons olive oil, about 8 minutes each side, set aside
  • Brown zucchini in two tablespoons olive oil
  • Layer zucchini, sliced tomatoes, cheese, and chicken into baking dish
  • Bake at 400 degrees for 45 minutes or until chicken is fully cooked.
