This lean cut of pork is relatively inexpensive that has a great amount of flavor. The trick to cooking it is to not let it get too dry. Using a crock pot is the easiest way to do this.
Season your meat and sear it in a heavy pan before placing it in the crock pot. Add the rest of the seasonings and broth and let it cook. It’s a ten-minute prep at the most. I love my Crockpot with all the bells and whistles, you push a button and set it to cook.
Set the crock pot to low and let it simmer for 4 hours, or until it reaches at least 145 degrees inside. Use those cooking juices as an Au jus when you serve it up.
Saving Some for Later
Anything you cave left from dinner makes a great lunch on the go for the next day. GI like to pack this up with all of the sides for a quick grab and take to work lunch. Leftovers can be kept in the refrigerator for up to 4 days and still be safely consumed.
You can also freeze these prepacked lunches for up to 3 months. I would be careful what vegetable sides you freeze with it as some can become soft. Potatoes and rice are the best to freeze to pair with this delicious pork tenderloin.
