Hearty Vegetable Beef Soup
Who doesn’t love a nice warm bowl of hearty vegetable beef soup on a cold winter day? I look out at a gloomy sky and automatically think of soups and stews. It just makes the house feel cozier on a cold gloomy day to simmer a nice, good soup all day long.
This one is definitely one of my favorites. I make it in spite of my picky eater who doesn’t like beef in soup. There really is nothing like a big bowl of steamy soup with some buttered bread watching the rain or snow come down.
This particular one is super easy because it is done in the crock pot. How did we ever live and cook without these things? Just prep your vegetables, set it, and continue on with your day while your house fills with amazing aromas.
Getting Set Up
Begin by chopping all of your vegetables into bite sized pieces. Add these to the crock pot while you prep the rest. Next, cut your beef into bite sized pieces and dip in flour, then brown it in a skillet with two tablespoons of vegetable oil.
Add the beef to the crock pot, cover with beef broth. For me, I add water and a nice sized spoon full of better than bullion paste. Don’t forget to add your tablespoon of tomato paste and salt and pepper.
Simply cover the crock pot and set it to low for 8-10 hours. It won’t take long before you are smelling the delicious aromas of this soup and wishing for it to be done faster.

Crockpot Vegetable Beef Soup

- Crockpot
Ingredients
- 1 lb. Beef stew meat
- 2 Tbsp All-purpose flour
- 2 Tbsp Vegetable Oil
- 3 Celery Stalks chopped
- 6 Red Potatoes Diced
- 2 Carrots Chopped
- 4 Garlic Cloves minced
- 1 Tbsp Fresh Thyme chopped
- 2 Tbsp Tomato Paste
- 4 Cups Beef Broth
- Additional vegetables as desired
Instructions
- Combine all ingredients in crockpot.
- Cook on low for 6-8 hours or on high for 2-3 hours
